Stay at Home Sunday.........



Hi Everybody...
Remember last week when it was sunny and 64 outside?
This is what I woke up to this morning...Grrrrrrrrrrrrr!!

I have this friend Peggy, who has a sister that is a severe Diabetic such as myself, and she has perfected many sugar-free recipe's. This Strawberry Pie was made with fresh strawberries, sugar-free strawberry Jello, and for liquid she used diet Red Pop..
WOW!!! Was it ever terrific!!
Right now I am marinating about 5#'s of boneless Chuck that I trimed and cut into strips. I am going to make...home made beef jerky..!
And of course, I am going to share this easy method with you all. Stay tuned if you dare!!!

From the interweb, just for you:

Garbanzos (also called chickpeas) are a good source of cholesterol-lowering fiber, as are most other beans. In addition to lowering cholesterol, garbanzos' high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. When combined with whole grains such as rice, garbanzos provide virtually fat-free high quality protein. But this is far from all garbanzos have to offer.

I will add that brown rice, is always better than white, when following this advice.

I used to LOVE beef jerky as a high-protein snack, but I find that it's sodium content is not all that up to snuff and I have therefore kept myself away from it over the past year and am going to try and keep it that way. Even the stuff at Whole Foods is full of salt. Even jerky made from stuff other than beef. Cos they have salmon jerky and turkey jerky too there.

Though, I am sure that making your OWN is WAY freaking healthier and the salt-content can be controlled and you now officially have my mouth watering.

Pie, jerky, and dice games always get me going.

One can only hope that you are going to include glorious, glorious pictures in your jerky post.

Your blog is like food porn.

It's awesome.

Especially when sausage is involved.

I had some kind of strawberry sponge cake thing Sat. night, and it wasn't too bad. Pie sounds better! Good luck with jerky...

Mmmm strawberry pie sounds delicious about now. Sounds like you all are experiencing the same bouncy weather that we are. We were at 72 for a high yesterday and today it is like 50 with a cold wind and to beat all, I was out in the sun all day yesterday and got sunburned.

I can't wait for your jerky recipe. We use to make jerky with a dehydrator but we got rid of our dehydrator and just haven't bought another.

I'm hoppin' on the Galen Needs to Eat Healthy Train with Lisa Marie Parsley.

And, yes, this is because I care about you.

Eating healthily is really fulfilling and yummy and makes it okay to splurge once in awhile on other stuff.

And you can have yummy stuff that is healthy.

That pie does look really good though.

But, I have a thing for pie.

However, I haven't eaten any in quite some time.

'tis a shame.

Oh wait!

No!

I had Key Lime in Key West.

A half of a slice.

It was good.

Prior to that I couldn't tell you when my last slice of pie was.

Back when I drank soda, I had a thing for the red Faygo, though. I never did drink diet. The taste... I'm sure the taste would not be there in the pie though.

But, I don't drink soda anymore either.

Only a root beer or a ginger ale once in a while. And that while is rare.

Anyway, we love you Galen and want you healthy-licious.
